Banoffee Pies

I wrote in my blog many many months ago about the Banoffee pies we had one day, just small individual ones and someone pointed out that I had not written up the recipe so here goes and this page will continue to collect recipes that I miss out on the blog page or just add when I feel that they should be shared.

Baby Banoffee Pies

1 portion of chocolate shortcrust pastry

1 250ml tin of condensed milk that has been boiled for 3 hrs in a saucepan full of  water, making sure that there is always water covering the tin, so it does not boil dry. Then removed and chilled overnight in the fridge

50 gms of dark chocolate grated

50 gms of dark chocolate melted

100 ml whipped cream

1 banana chopped finely

Roll out the pastry and cut small circles to line either a small muffin tin or make them bigger to fit jam tart tins. Prick the bases and place back in the fridge to chill for 30 mins.

Preheat the oven to gas mark 4/180

With the small muffin cases either place the tins inside one another so the pastry does not rise or place baking paper in each and fill with baking beans. Bake for 10 mins and remove the baking paper and beans and bake again for another 5 – 8 mins until the pastry is cooked.

Remove and allow to chill.

Mix the chopped banana with the condenced milk and place a teaspoon of the mixture into each empty pastry case. Sprinkle on the grated chocolate, and then top with whipped cream. Sprinkle more chocolate ontop or drizzle on some melted chocolate and serve
