Skies at 5 am were purple, pinks oranges… does this mean wind as we sit at anchor in Golfo di Pevero off the Costa Smeralda waiting to start a regatta this week ! Great way to start the day doing yoga on the deck whilst watching the skies change colour and finally the sun rises for another beautiful summers day

Over the last 24 hrs our racing team has been flying in from Italy, Germany, USA, Poland and Denmark and today they will all be onboard for a training day using all the sails, courses possible in the time we have today to build up as the race team for this regatta, Loro Piana Superyacht Cup 2010 !

As for me… started by baking an apple, cinnamon and ginger cake, followed by prepping the chicken for the sandwiches tomorrow as our deck crew go ashore for my bread for the tuna sandwiches today.. 70 sandwiches a day, a cake and cookies after the race finishes and then beers and snacks… a daily routing until Saturday !

Adrenaline rushes through my blood as I know I have to do so much each day to feed these hungry boys… Fruit baskets, museli bars, chocolates are dotted about with eskis full of water and soft drinks for them to grab during the day.

Well here we go, I have guests for breakfast so cannot write much today but will hopefully get to write a bit down later as to how we did as a team on our first training day this summer ….

Apple Cinnamon and Ginger tray bake

250gm softened butter

1 cup sugar

4 eggs beaten lightly

1tsp vanilla

1/2 tsp baking powder

2 cups Self Raising flour

1 tsp ground ginger

1 tsp ground cinnamon

2 apples peeled and grated

tablesp milk

Pre heat the oven 180/gas mark 4

Line and butter a tray bake tin 30cm X 20 – 25cm

Toss the grated apple with 1 tablespoon of sugar and half the ginger and cinnamon and set aside

Beat the butter and sugar in a bowl until light and fluffy, about 5 mins. Beat in the eggs slowly making sure you beat them in well before adding more, as the mixture can spilt. Add the vanilla and beat again.

Fold in the flour, baking powder and finally the milk and 1/2 the grated apple, folding in gently to keep the air inside the mixture. Top the cake with the remaining grated apple and sprinkle on an extra tablespoon of sugar

Spoon into the prepared tin and place in the oven for 50 mins or until golden and risen.

Allow to rest in the tin for at least 10 mins before turning out on to a cooling rack.

Serve warm with vanilla ice cream
